Very Berry Pecan Scones Recipe

Ingredients

  • 2 c. all- purpose flour

  • 1/3 c. brown sugar

  • 1 T. baking powder

  • 1/2 tsp. salt

  • 1/2 c. cold butter, cut into 1/2-inch cubes

  • 1 c. heavy cream, divided

  • 1/2 c. toasted pecans, chopped and toasted

  • 1 tsp. vanilla

  • 1/4 c. strawberry jam

Let's Get Started!

Step 1: Preheat oven to 450 degrees.

Step 2: In a food processor with a fitted blade, combine flour, sugar, baking powder, and salt, pulse a few times to incorporate. Cut the butter into the flour mixture and pulse until mixture is crumbly

Step 3: Transfer flour mix to a bowl and add 3/4 cup of heavy cream and pecans. Stir to combine.

Step 4: Place the dough on a floured work surface. With floured hands, knead the dough and pat it into two 7-inch circles. Spread jam on top of one half of the dough, then top with the remaining dough. Cut into 8 triangle wedges.

Step 5: Transfer the wedges onto a lightly greased cookie sheet and chill in the refrigerator for 20 minutes.

Step 6: Brush the tops of wedges with the remaining heavy cream and bake in oven for 15- 20 minutes
