Ingredients:
Chicken Wings
3 pounds chicken wing, sections
2 T. season salt
1 tsp. pepper
Glaze
3/4 c. apricot preserves
1/3 c. rice vinegar
2 T. soy sauce
1 tsp. ground ginger
1 tsp. garlic powder
Pinch red pepper flakes
Let's Get Started
1. Preheat oven to 400 F. Line a baking sheet with foil, then coat with cooking spray.
2. Place the wing pieces on the backing sheet and sprinkle both sides with season salt and pepper. Bake for 25 minutes. Remove chicken from the oven turn over the wings and return to oven to cook for another 20 minutes.
Make the Sweet & Sassy Glaze:
3. In a medium bowl, combine apricot preserves, vinegar, soy sauce, ginger, garlic powder and red pepper flakes. Whisk to combine, then set aside.
4. Remove chicken from the oven and turn on the broiler.
5. Dunk the wings in the sauce, completely coating them then return them to the pan.
6. Place the coated wings under the broiler to caramelize for about 2-3 minutes. Watch them closely so that they do not burn.
