Shrimp Burgers Recipe

Serves: 4

Ingredients

  • 2-pound medium shrimp, peeled and deveined

  • 1 c. panko breadcrumbs

  • 2 T. lemon juice

  • 1 T. lemon zest

  • 1/4 c. fresh parsley, chopped

  • 1/2 tsp. kosher salt

  • 1/4 tsp. garlic powder

  • 2 tsp. Old Bay seasoning

  • 1/4 tsp. black pepper

  • ½ c.  red onions, chopped small

  • 2 large eggs, beaten

  • 1/4 c. canola oil

  • 2 T. butter, softened

  • 12 potato rolls

  • 12 lettuce leaves

  • 2 tomatoes, sliced

  • 1 c. curry mayo

Let's Get Started!

Step 1: Coarsely chop half of the shrimp and set aside. Put the remaining shrimp in a food processor and pulse until smooth.

Step 2: In a large bowl, combine both halves of the shrimp with the remaining ingredients (down to the eggs) and mix until well combined. Shape into patties using a heaping 1/2 cup measures then flatten into circles.

Step 3: Heat oil in a large skillet over medium heat.

Step 4: Cook burgers about 3-4 minutes, flip and add more oil if needed. Then cook an additional 3 minutes or until cook through.

Step 5: Spread butter on the rolls and toast in a skillet over a medium heat until lightly brown.

Step 6: Serve burgers on the toasted rolls with lettuce, tomato and curry mayo or your favorite sauce.
