Cooking Tips
Room Temperature Ingredients
Allow eggs and other dairy ingredients to come to room temperature before using. This ensures better incorporation and a smoother texture in the pie filling.
Fresh Lime Juice
While the recipe allows for either fresh lime juice or Key lime juice, using fresh juice can enhance the flavor of the pie. Squeeze the limes just before starting the recipe for the best taste.
Thorough Incorporation
When adding lime juice, condensed milk, sour cream, and lime rind, ensure thorough mixing to achieve a thick and consistent pie filling.
Baking Time Accuracy
Keep an eye on the pie during the 30-minute baking period. The goal is a firm center, so adjust the time accordingly based on your oven's performance.
Cover Before Chilling
Cover the pie before chilling to prevent any potential odors from the refrigerator affecting the flavor of the pie.
