Lemon Icebox Pie Recipe

Ingredients:

Crust
  • 1 1/2 c. graham cracker crust

  • 2 T. sugar

  • 6 T. melted butter

Pie Filling
  • 8 oz. block cream cheese, room temperature

  • 14 oz. sweetened condensed milk

  • 1/3 c. lemon juice

  • 1 T. lemon zest

  • 1/2 tsp vanilla extract

  • 1 c. heavy cream, cold 

Let's Get Started!

Crust

1.  In a medium bowl, combine graham cracker crumbs and granulated sugar. Add melted butter and stir until incorporated.2.  Using the back of a measuring cup, press the graham cracker mixture firmly into the bottom and sides of a 9-inch pie pan.3.  Refrigerate while preparing the pie filling.

Pie Filling

Step 1: In a large bowl, add cream cheese and mix until smooth using a hand mixer. Add sweetened condensed milk and mix on low, slowly increasing to medium speed until mixture is smooth.

Step 2: Then add vanilla extract, lemon juice, and lemon zest. Mix until incorporated. Set aside.

Step 3: In a separate bowl use a whisk to whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until combined.

Step 4:  Pour the pie filling into graham cracker crust and smooth the top with a spatula.

Step 5:  Refrigerate until firm and chilled, at least 1 hour (or longer). Serve chilled.
