3 T. extra-virgin olive oil
1 1/2 T. fresh lemon juice
salt/pepper
3-4 ripe peaches, quartered/pitted and quarter cut into 4 slices
12 oz. fresh mozzarella cheese, halved and sliced 1/4 inch thick
6 fresh basil leaves, torn into small pieces
