Just Peachy Caprese Recipe


Ingredients:

  • 3 T. extra-virgin olive oil

  • 1 1/2 T. fresh lemon juice

  • salt/pepper

  • 3-4 ripe peaches, quartered/pitted and quarter cut into 4 slices

  • 12 oz. fresh mozzarella cheese, halved and sliced 1/4 inch thick

  • 6 fresh basil leaves, torn into small pieces


Let's Get Started!

1.Whisk oil, lemon juice, 1/4 tsp. salt and 1/8 tsp pepper together in a large bowl.

Add peaches and gently toss to coat. 

2. Shingle peaches and mozzarella on a serving platter. Drizzle remaining dressing from bowl over the top. Sprinkle with basil. Season with salt/pepper. Serve!
