Easy Strawberry Tart Recipe

Ingredients:
2 pints strawberries, hulled and cut in half
1 tsp. vanilla extract
1 tsp. lemon zest, grated
juice of 1/2 lemon
2 refrigerated pie crust, (Pillsbury)
1 large egg, whisked with 1 T. water
1/3 c. strawberry preserves
Sweetened whipped cream or whipped topping, for serving

1. Preheat oven to 400 degrees. In a large bowl, combine the strawberries, sugar, flour, vanilla, lemon zest, and lemon juice. Toss until combined. Then set aside.
2. On a floured surface, unroll the pie crusts and overlap them so that half one is covering the other. Use a rolling pin to press them together then roll them out to about 11 x 19 inches. Place the crusts onto a sheet pan, with the excess hanging over the sides.
3. Place the strawberries in the center of the crust, try not to mound them too high. Then fold the edges of the crust to create a rim, using your fingers to pleat as you go. Use a pastry brush to lightly coat the crust with the egg wash.
4. Bake the tart for 30 minutes, rotate the pan halfway through baking for even browning. Let the tart sit for 15 minutes so that the strawberries can set.
5. Heat the strawberry preserves in a small pan with 2 tablespoons of water over medium heat. Brush the strawberry tart with the melted preserves to give them an extra shine. Slice and serve with whipped cream.
