Easy Coca Cola Cake Recipe

Ingredients:

Cake:

  • 1 c. coca cola

  • 1/2 c. canola oil

  • 1/2 c. butter

  • 3 T. cocoa powder

  • 1/2 c. mini marshmallows

  • 2 c. granulated sugar

  • 2 c. all-purpose flour

  • 1 tsp. salt

  • 2 eggs, room temperature

  • 1/2 c. buttermilk

  • 1 tsp. baking soda

  • 1 tsp. vanilla extract

Frosting:

  • 1/2 c. butter, room temperature

  • 3 T. cocoa powder

  • 3 T. milk

  • 3 T. Coca Cola

  • 1 tsp. vanilla extract

  • 2 c. confectioner's sugar


Let's Get Started!

Cake

1. Preheat oven to 350 degrees. In a medium pan, add Coca-Cola, oil, butter and cocoa and heat over a medium high heat until it boils, then turn off heat.

2. Add in marshmallows and whisk together until the marshmallows melt in the mixture and set aside.

3. In a large bowl, add sugar, flour and salt. Slowly pour in the hot cocoa mixture and mix at a medium speed. Next add in eggs, buttermilk, baking soda and vanilla extract and beat until well combined.

4. Spray a 9x13 sheet cake pan with baking spray. Pour the cake batter into the pan and spread out evenly.

5. Bake for 40-50 minutes or until a toothpick inserted into the center comes out clean.

Frosting

1. In a medium pot, add butter, cocoa powder, milk, coca cola, vanilla extract and confectioners’ sugar over a medium high heat and whisk together until boiling and mixed well.

2. When cake is done baking, remove it from the oven and pour the hot frosting on top of the cake and let it cool. Serve and enjoy!
