Chicken Zucchini Minis Recipe
Serves: 4-5 | Prep Time: 15 mins | Cook Time: 20 mins
Ingredients
2 c. zucchini, grated
1 lb. ground chicken
1 egg
2 green onions, finely chopped
1 glove garlic
¼ c. finely chopped parsley
½ tsp. dried thyme
½ tsp. season salt
¼ c parmesan cheese, grated
Let's Get Started!
Step 1: Preheat oven to 400 F.
Step 2: In a large bowl, mix zucchini, chicken, egg, onions, garlic, parsley, thyme, salt, and parmesan cheese together until combined.
Step 3: Place rounded tablespoons of chicken mixture on to a lined baking sheet, spacing them about 1 inch apart.
Step 4: Bake 18-20 minutes until the centers are firm.
Step 5: Remove from the oven and sprinkle with parmesan cheese. Set the oven to broiler then return chicken to the oven and broil until tops are light brown.
Jazz It Up!
Spices: add a pinch of red pepper flakes, cayenne, or your favorite spice blend to bring some heat
Experiment with Veggies: add finely chopped bell peppers, spinach, or even grated carrots for more color & nutrients

Fridge: store in an airtight container & reheat by warming them in the oven for about 10-15 minutes until heated at about 350 degrees
Freeze in an airtight container or resealable bag separated by layers of parchment paper. To reheat, bake at about 325 degrees for 20-25 mins until warm
