Use the large grater holes. Press out extra moisture with a clean kitchen towel.

Uniform Size

Make the minis about the same shape and size for even cooking.


Chicken Zucchini Minis Recipe

Serves: 4-5 | Prep Time: 15 mins | Cook Time: 20 mins


Ingredients

2 c. zucchini, grated

1 lb. ground chicken

1 egg

2 green onions, finely chopped

1 glove garlic

¼ c. finely chopped parsley

½ tsp. dried thyme

½ tsp. season salt

¼ c parmesan cheese, grated


Let's Get Started!

Step 1: Preheat oven to 400 F.

Step 2: In a large bowl, mix zucchini, chicken, egg, onions, garlic, parsley, thyme, salt, and parmesan cheese together until combined.

Step 3: Place rounded tablespoons of chicken mixture on to a lined baking sheet, spacing them about 1 inch apart.

Step 4: Bake 18-20 minutes until the centers are firm.

Step 5: Remove from the oven and sprinkle with parmesan cheese. Set the oven to broiler then return chicken to the oven and broil until tops are light brown.


Jazz It Up!

  • Spices: add a pinch of red pepper flakes, cayenne, or your favorite spice blend to bring some heat

  • Experiment with Veggies: add finely chopped bell peppers, spinach, or even grated carrots for more color & nutrients

  • Lemon Zest: add a little zest for a bright and citrusy flavor

Sauce Suggestions

  • Tzatziki Sauce: this cool & creamy sauce is a refreshing complement

  • Garlic Aioli: a rich & savory sauce that enhances the overall taste

  • Pesto: adds a burst of herbal flavor

  • Honey Mustard: a sweet & tangy sauce that complements the chicken

  • Balsamic Glaze: drizzle balsamic glaze for a slightly sweet & acidic kick

Save Some For Later

  • Fridge: store in an airtight container & reheat by warming them in the oven for about 10-15 minutes until heated at about 350 degrees

  • Freeze in an airtight container or resealable bag separated by layers of parchment paper. To reheat, bake at about 325 degrees for 20-25 mins until warm
