Chicken Parmesan

Chicken Parmesan Recipe

Ingredients

  • 2 large boneless skinless chicken breasts

  • Salt/pepper

  • ¼ c. canola oil

Flour Mixture

  • ½ c. flour

  • 1 ½ tsp. seasoned salt

  • ¼ tsp. pepper

Egg Mixture

  • 2 eggs, beaten

  • ½ tsp. garlic powder

Breading Mixture

  • 1 ½ c. panko breadcrumbs

  • 1/3 c. parmesan cheese

  • 1 tsp. dried parsley

  • 1 tsp. oregano

Topping

  • 1 c. marinara sauce

  • 1 ½ c. mozzarella cheese, shredded

  • Parsley to garnish

 

Let's Get Started!

Step 1:  Preheat oven to 425.  In three separate shallow dishes, combine the flour, eggs, and breading mixtures.

Step 2:  Slice the chicken in half to create 2 thinner slices.  Place in a Ziplock bag and pound with the textured side of a mallet until chicken is ½ inch thick (thinner the better), then remove from bag.  Pat dry and sprinkle with salt and pepper.

Step 3:  Dredge in the flour mixture and tap of excess. Then dip the chicken in the egg mixture until coated. Next coat the chicken generously in the breadcrumbs.

Step 4:  Heat oil over medium heat.  Add two pieces of chicken to the skillet.  Brown on both sides about 3-4 minutes.  Adjust the heat as needed so that oil does not get too hot.

Step 5:  Remove cooked chicken and set on a cooling rack.  Repeat cooking process with remaining chicken.

Step 6:  Transfer chicken to a large baking sheet and top with marinara sauce and mozzarella cheese.

Step 7:  Bake uncovered for 10-12 minutes. Then broil at 425 for 1-2 minutes so that the top will brown.

Step 8:  Garnish with parsley and serve with thin spaghetti and some garlic bread
