Chicken In My Chili

Busy weeknight family meal, a potluck, or game day-it doesn’t get any better than a hearty bowl of chili. This recipe is a great alternative to the tomato & beef-based version for when you're craving something different. And if you want even more variety, experiment with suggestions in my Jazz It Up! section! This chili's so good, you probably won’t have any leftovers.

Chicken Chili Recipe

Serves: 8 | Prep Time: 10 mins| Cook Time: 20 mins


Ingredients

2 T. butter

2 T. flour

3 c. chicken stock or broth

½ c sour cream

1 c. half and half

4 c. rotisserie chicken, shredded or chopped

1 clove garlic, minced

1 medium onion

1 (15 oz.) can white beans, drained

1 tsp. dried oregano

1 tsp. ground cumin

½ tsp. chili powder

1 tsp. sea salt

1 tsp. pepper


Let's Get Started!

Step 1: Over medium heat, using a 4-quart Dutch oven or large pot, melt butter and whisk in flour.

Step 2: Add chicken stock and the remaining ingredients. Stir until well combined. Adjust seasoning to taste.

Step 3: Simmer over low heat for 15 minutes. Remove and serve.


Jazz It Up!

  • Instead of rotisserie chicken, try grilling chicken breasts/thighs and then shredding or chopping them for a smokier flavor

  • Switch up the toppings! If you have guests, offer a selection of shredded cheeses, sliced green onion, or even diced avocado

Garnishes

  • Cilantro: fresh & vibrant herbal note

  • Sliced Jalapenos: add an extra kick of spice to your chicken chili

  • Sour Cream: add a nice dollop

White beans are my favorite for this recipe, but here are some more variations to try:
