Chicken & Shrimp Roll-Ups Recipe
Ingredients:
6 chicken breasts, cut in half, pounded thin
1 ¾ c. shrimp, cooked, and chopped
¾ c. butter, softened
¼ c. breadcrumbs
2 ½ tsp. salt, divided
¼ c. scallions, finely chopped
1 T. Thyme, fresh or dried
1 c. all- purpose flour
1 ¼ tsp. baking powder
¾ c. water
toothpicks (to fasten chicken)

Let's Get Started!
1. Pound chicken to about 1/4-inch thickness; then set aside. In a medium bowl, combine and mix the shrimp and the next five ingredients plus 1 1/2 tsp. of salt (down to thyme).
2. Spoon about 2 tablespoons or more of the shrimp mixture on to the center of each chicken breast, leaving 1/2-inch edge all the way around. Roll each chicken breast and fasten with toothpicks. Cover and refrigerate 15 minutes.
3. In a separate bowl, combine flour, baking powder and 1 tsp. of salt. Gradually stir in water until smooth. set aside.
4. Heat canola oil (1 to 1 1/2 inch deep) to 375 degrees. Using tongs, dip chicken rolls one at a time into the flour mixture. Fry in oil for about 15 minutes or until golden brown, turning occasionally. Drain on a paper towel and keep warm. Repeat until all chicken rolls have been cooked.
5. Remove toothpicks and serve immediately.
