Caramel Apple Pie Recipe
Prep: 20 mins. | Cook time: 1hr. | Serves: 12
Ingredients:
Crust:
16 oz. refrigerated sugar cookie dough
1/2 c. flour
Apple Filling:
2 1/2 pounds apples, peeled and cored
1/2 c. sugar
1/8 c. flour
1 1/2 tsp. apple pie spice
1 1/4 c. caramel topping
Crumble Topping:
1 c. flour
1/2 c. brown sugar, packed
1/2 c. sugar
1 tsp. vanilla
1 1/2 tsp. apple pie spice
1/2 c. butter, melted
Let's Get Started!
1. Heat oven to 350 degrees. Lightly spray a 9-inch pie pan or regular muffin tin with nonstick cooking spray.
2. Mix the cookie dough and flour in a bowl until well combined. Press dough into the bottom of the pan or muffin tin and go up the sides about 3/4 inches. Ensure that there are no holes.
3. In a mixing bowl, toss apples, sugar, and apple pie spice together, then add it to the prepared crust and spread evenly. Drizzle 3/4 cups of caramel topping over the mixture.
Cover with foil and cook for 45 minutes (in spring form pan) or 25 to 30 minutes (in the muffin tin) until edges start to brown.
4. Crumble Topping: While pie is baking, combine flour, brown sugar, sugar, vanilla and apple pie spice. Add in melted butter and mix until it forms a wet crumb mixture.
5. Remove pie from oven and sprinkle crumb mixture over the top. Return the pie to the oven and bake uncovered for 15 to 20 minutes until the top is lightly browned. Allow pie to cool (about 15 minutes) and drizzle with additional caramel before serving.
