Ingredients:
Shrimp:
8 oz medium shrimp, 38/40 count, peeled and deveined
1 c. buttermilk
1 c. cornstarch
2 c. canola oil, for frying
Big Bang Sauce:
1/2 c. mayonnaise
2 T. sweet chili sauce
2 1/2 T. sriracha (to taste)
1/4 tsp. sea salt
lettuce, for serving
green onions, for garnishing
Let's Get Started!
1. Make the sauce: in a small bowl mix the mayo, sweet chili sauce, hot sauce and salt. Cover and keep refrigerated until needed.
2. Prepare the shrimp: In a small bowl, marinate shrimp in buttermilk for up to 10 minutes. *Don't oversoak the shrimp. Preheat the oil to 375 degrees in a Dutch oven pot over a medium heat.
3. Remove the shrimp from the buttermilk and drain off any excess liquid. Dredge shrimp into the cornstarch and shake off any excess starch. Arrange 6-8 shrimp on a cutting board, working in small batches.
4. Fry the shrimp (6 to 8 at a time) until they float to the top and are golden brown (2-3 minutes).Transfer shrimp to a plate lined with paper towels to drain the excess oil.
5. Toss the fried shrimp in the sauce while still warm to absorb the sauce. Serve over a bed of lettuce and garnish with green onions.
